On Earth Day this year, as the world reflects on the urgent need to protect the planet, some Indian restaurants are turning the spotlight toward an unlikely hero of sustainability—the cocktail. But these aren’t your run-of-the-mill mojitos or margaritas. Instead, they’re meticulously crafted, delightfully bold, and, most importantly, zero-waste. These restaurants are emerging with eco-friendly ingredients, zero-waste garnishes, and, for some of them, their proceeds supporting environmental causes. These restaurants are celebrating Earth Day not just in spirit, but through action. We present to you a list of Indian restaurants who are stirring things up for Earth Day 2025.
Hyatt Regency Dehradun Resort and Spa

At Hyatt Regency Dehradun Resort and Spa, sustainability takes center stage this Earth Day with the introduction of a zero-waste cocktail—the Beyul Punch. They craft the Beyul Punch with a house-made plum purée, fresh ginger juice, and black tea to create a refreshing blend that showcases our commitment to eco-conscious hospitality. The leftover plum pulp is then dehydrated, and the tea residue is used to make a flavourful plum leather garnish, serving this signature cocktail, Beyul.

Their Imli Sour, which is a drink inspired from Tamarind Panna, uses tamarind seeds instead of wasting them, which are then roasted and infused into syrup. For their Aam-E-Moji, the mango peels and pits are boiled for syrup or shrub, and then the mango skin is candied to use as an edible garnish. Their Sherbet Khaas cocktail, which is inspired by a Kokum Sherbet, also rehydrates kokum peels to be used in the drink. Besides these, they have plenty of other zero-waste cocktails that celebrate Earth Day.
